Just in Time for Fall…Butternut Squash Gratin
Whether you’ve had your scarf and sweater ready to roll for weeks as you gear up for apple picking time, or are still trying to squeeze in a couple more days of shorts, sandals, and blockbuster watching, you can’t deny it: fall fell this week. The world, as you look out the window, just looks different than it did two weeks ago. Really. Look outside. Right now. See? Which means, among other things, it’s time for things to smell and taste like fall: spicy, herbaceous, nutty, warm, and…well, sage-y. Like this butternut squash and gryuere cheese gratin. The dish is, “straightforward in its enthusiasm for the season, but graciously so. It employs a host of cozy flavors that give great depth to the dish; the butternut squash is bathed in apple cider vinegar, tossed with caramelized onions and topped with nutty Gruyere cheese, fresh sage and crunchy, toasted hazelnuts.”
Well, that settles what I’ll be making this weekend.
